Mexican Chocolate Pots de creme
These are exactly what your day needs! They are rich, creamy, and so chocolaty!
I’m a strong believer that food is medicine and that absolutely means dessert too! These Pots de Creme have a healthy dose of fiber, Omega 3s, magnesium, calcium, have anti-inflammatory properties, antioxidants, are great for your hair and skin, plus they taste amazing! They are also 10 year old approved, which is always a win in my book. You can always count on kids for their honesty.
Mexican Chocolate Pots de Creme
-1 can organic coconut cream
-2 Tbs raw honey
-1 tsp vanilla extract
- 1/3 cups chia seeds
-1 tsp cinnamon
-a pinch of coriander
-the tiniest pinch of cayenne pepper
-3 Tbs cacao powder
Method
Place all of the ingredients in a blender. Blend on high until nice and smooth, took about a minute in my vitamix. Pour it into little jars for single servings or you can store it all together in a food storage container. Refrigerate for at least 2 hours. Sprinkle on some grated chocolate, berries, or just grab a spoon and go to it!
