Persimmon Yogurt Parfait

Persimmons!! One of my favorite fruits. They are very seasonal and are an awesome source of natural sugar and healthy carbs. Persimmons also contain a good dose of vitamin C, Vitamin A, Manganese, Potassium, Vitamin B6, and fiber. So much good stuff!

This delicious yogurt parfait is just one way to enjoy them. I like them sliced up on their own or with a little cinnamon on top too.

*Peaches or cherries taste great in this parfait as well if you are not a fan of persimmons.

Persimmon Yogurt Parfait

-1 cup yogurt of choice or chia pudding

-3 Tbs GF oats

-1 tsp flax meal

-1 persimmon, cut into bite size pieces

-a pinch of cinnamon

Persimmons are so sweet on their own so there’s no need for any added honey or anything. In a bowl or jar layer the yogurt on the bottom followed by the other ingredients. Mix together and eat up!
