Berry Chia Jam

By request, here is the recipe for the Chia Seed Jam I’ve been putting on everything!

Last time I made it with cranberries, this time I used mixed berries and it’s still absolutely delicious! The cranberries were more tart so this is a little sweeter because of the type of berries. Love a versatile recipe!

I’ve been eating chia seeds forever! My mom used to bring them from Iran because they weren’t available here. It’s funny, we didn’t even know they were called chia seeds! Then all of a sudden they were everywhere and I learned that in addition to the fun texture they have, chia seeds are loaded with antioxidants, protein, omega-3s, and fiber! Sometimes I feel like our ancestors really knew what they were doing. But I digress, go make this jam and thank me later.

Ingredients

  • 1 lb. bag organic frozen berry of choice

  • 1/3 cup coconut sugar

  • 1/3 cup chia seeds

  • 1 tsp vanilla extract

Method

You want to defrost the berries in the bag. So leave them out on the counter for a few hours before making your jam. Place the berries, coconut sugar, and vanilla in a small pot and stir together. Place the lid on the pot and heat over medium high heat until it comes to a boil. Bring the heat down to low and let it simmer for 5 minutes, stirring occasionally. Turn off the stove and stir in the chia seeds. Transfer to a jar and allow to cool before storing in the fridge. It keeps really well, but it’s so good it won’t last long!
